Ingredients

Serves 4–6

Base

  • 700 g ground beef
  • 1 onion
  • 2 garlic cloves
  • 1 red bell pepper
  • 1 tbsp tomato paste
  • 1 can crushed tomatoes
  • 1 cup beef stock

Spices

  • 1–2 tbsp chilli powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp oregano
  • salt & pepper

Beans

  • 1–2 cans kidney beans

Optional

  • 1 tsp brown sugar
  • 1 splash Worcestershire sauce

Method

  1. Brown beef.
  2. Sauté onion and bell pepper.
  3. Add garlic.
  4. Add spices → bloom.
  5. Add tomato paste → caramelize.
  6. Add tomatoes and stock.
  7. Simmer 45–60 minutes.
  8. Add beans for the last 20 minutes.
