Meat
- 500 g beef short ribs (braised, shredded)
- 300 g 80/20 ground beef
Chilli Base
- ancho + guajillo paste
- 1 small onion (brunoise)
- 3 garlic cloves
- 1 tbsp tomato paste
- 500 ml rich beef stock
Depth Layer
- 1 tsp cocoa powder
- 1 tsp espresso
- 1 tsp Worcestershire sauce
- 0.5 tsp soy sauce
- 0.5 tsp cinnamon
Acid
- 1 tsp sherry vinegar (finish only)
Beans (optional)
- butter beans or small black beans (minimal quantity)
Method
- Braise short ribs 3 hours → shred.
- Brown ground beef deeply.
- Sweat onion slowly (no color).
- Add chilli paste → reduce until thick.
- Add tomato paste → cook dark.
- Add stock → reduce.
- Fold in shredded ribs.
- Add cocoa, espresso and umami elements.
- Long gentle reduction until glossy.
- Finish with vinegar and precise salt adjustment.
