Ingredients

Serves 4

Meat

  • 500 g beef short ribs (braised, shredded)
  • 300 g 80/20 ground beef

Chilli Base

  • ancho + guajillo paste
  • 1 small onion (brunoise)
  • 3 garlic cloves
  • 1 tbsp tomato paste
  • 500 ml rich beef stock

Depth Layer

  • 1 tsp cocoa powder
  • 1 tsp espresso
  • 1 tsp Worcestershire sauce
  • 0.5 tsp soy sauce
  • 0.5 tsp cinnamon

Acid

  • 1 tsp sherry vinegar (finish only)

Beans (optional)

  • butter beans or small black beans (minimal quantity)

Method

  1. Braise short ribs 3 hours → shred.
  2. Brown ground beef deeply.
  3. Sweat onion slowly (no color).
  4. Add chilli paste → reduce until thick.
  5. Add tomato paste → cook dark.
  6. Add stock → reduce.
  7. Fold in shredded ribs.
  8. Add cocoa, espresso and umami elements.
  9. Long gentle reduction until glossy.
  10. Finish with vinegar and precise salt adjustment.
